We’re welcoming special guests from the Mystic Aquarium to share their work in sustaining and protecting sea life. Don’t miss the critically endangered African Penguins who will make an appearance at the beginning of the event. Throughout the evening, you’ll also hear from Mystic Aquarium team members about their work to sustain and protect marine life, including these African Penguins—which is made possible through your generous support.

About Erin Parker
Erin began pursuing a career in wine in the fall of 2011 in a sales role with Perfecta Wine Co. where she spent 8 years selling a boutique wine portfolio in New Hampshire, learning the industry and achieving WSET Level 3 Advanced and Level 2 Certified Sommelier through the Court of Masters.
Momentum led her to immersive trips to California, Oregon, Washington, France, and Bulgaria that further ignited her passion for the wine and spirits industry. Her repertoire grew to working with innovative, craft gin distillers, and a wine-based portfolio with Pine State New Hampshire, where she managed a sales team, selling ultra premium wines…like Round Pond Estate!
Erin now proudly represents the Napa and Rutherford based Round Pond portfolio in 14 states as Northeast Regional Sales Manager.
Outside of wine, Erin enjoys knitting, reading, travel, and genuine human connection. Weekends are spent relaxing and adventuring with her husband of 10 years, and their 80lb couch potato Greyhound. Nothing beats good food, wine, and love.
About Executive Chef Christophe Santos
Christophe Santos is a classically French-trained chef with nearly two decades of culinary experience that spans the globe. From his formative years under legendary chef Alain Ducasse at Michelin-starred Bar et Boeuf in Monte Carlo to leading prestigious kitchens including Bistro du Marché, and ÔToulouse, Santos has earned an enviable reputation for his hands-on leadership and seasonally inspired menus. As Executive Chef, he brings a passion for French technique, local ingredients, and elevated dining to the entire food and beverage program at Madison Beach Hotel, including its award-winning waterfront restaurant, The Wharf Restaurant.
