Celebrated for sparking the classic cocktail revival in New York’s famous Rainbow Room in the 1990’s, Dale DeGroff reinvented the bartending profession, igniting a global cocktail renaissance that continues to this day.
Dale’s contributions are credited with two James Beard awards, the Tales of the Cocktail Lifetime Achievement Award, Wine Enthusiast’s 2019 Cocktail Legend Award, and many others. In what began as a quest to create an artisanal spirits befitting of classic cocktail excellence, Dale forged a collaboration with T.A. Breaux, renowned Absinthe Expert and Master Distiller.
Often credited with reigniting the craft cocktail renaissance of the modern era, we are still riding the wave that ‘King Cocktail’ created during this time at NYC’s famed Rainbow Room in the 1980s. With a nod to a time when showmanship was everything, our collaboration with Dale DeGroff shows off the theatrical side of bartending.

Dinner will feature multiple courses paired with Hendrick’s gin cocktails including Hendrick’s gin tastings to start.
First course
Belgium endive salad, walnuts, blue cheese, poached pears, Dijon mustard vinaigrette
HENDRICKS and TONIC…Hendricks din, DeGroff Bitter Apertivo, Pink Grapefruit
Second course
Local black seabass ‘a la plancha’, wild rice, pineapple confit, curry sauce
PACIFIC RIM MARTINI…Hendricks Oasium, Dry Vermouth Ichiko mix, Pineapple/Coconut foam
Third course
Oven roasted bone-in pork chop, cauliflower puree, candied chestnut, whole grain mustard pork jus
CHOPSTICK…..Bright Light Bourbon, Apfel Liqueur, Angostura Bitters
Cheese course
Petit Basque, homemade berry preserve
Dessert course
Warm chocolate fondant with notes of spice

PRICING:
Reception and Dinner : $150.00 inclusive per person, includes all food and beverage, gratuity and sales tax.
SEATING: Upon check out, please indicate your seating preferences and let us know if you are attending with a group, but purchasing tickets separately. We will do our best to accommodate all seating preferences. Seating is banquet-style accommodating 6 – 10 guests per table.
