Madison Beach Hotel Presents Epicurean Dinner Series with Mystic Aquarium & Round Pond Estate

MADISON, Conn. [October 23, 2025]  – Madison Beach Hotel, Curio Collection by Hilton, invites guests to an unforgettable evening of fine dining, exceptional wines, and marine conservation on November 7, 2025 at 7 p.m. for their fall installment of the Epicurean Dinner Series in partnership with Mystic Aquarium and Round Pond Estate.  

This exclusive ticketed event showcases a thoughtfully curated, multi-course menu centered on sustainability, crafted by Executive Chef Christophe Santos, who oversees the property’s food and beverage program. Santos merges his love for seasonal New England ingredients with his classic French training alongside his dedicated culinary team. For this dinner experience, he’s composed a menu that complements thoughtfully selected wine pairings from Round Pond Estate of Rutherford, California, in Napa Valley. Round Hill wines are sustainably grown with eco-friendly practices, using lightweight glass and natural cork closures. Throughout the evening, Sommeliers Erin Parker and Tanya Raisz will share insights into each pairing and how the wines enhance Chef Santos’ inventive cuisine.

Adding to the evening’s magic, special guests from Mystic Aquarium will be on hand to discuss their vital work in sustaining and protecting marine life. The highlight of the evening will be a special appearance by the critically endangered African Penguins, offering guests an up-close encounter at the start of the event with the beloved penguins.

The evening will support Mystic Aquarium’s ongoing conservation efforts to protect sea life and their habitats. All profits from this exclusive event will benefit the Mystic Aquarium. 

Launched in 2018, the Epicurean Series brings acclaimed chefs, culinary pioneers, master mixologists and gastronomes together for an intimate, immersive dining experience that showcases their exceptional talents. Held four times a year, the Epicurean Series has welcomed James Beard Award winners, celebrated chefs from Bon Appétit’s Test Kitchen and Weekends with Yankee, renowned food artisans, best selling chef-authors, and other luminaries in the culinary, wine, and spirits worlds.

First Course

Point Reyes blue cheese tart with caramelized onions, Bartlett pear, and baby arugula

Wine: Estate Sauvignon Blanc

Second Course

Oven-roasted Sablefish (black cod) with charred romanesco, lemon verbena velouté, and fried capers

Wine: Rosato di Nebbiolo

Third Course

Braised short rib “Bourguignon” with roasted root vegetables, pearl onion, bacon, and cabernet sauvignon sauce
Wine: Kith and Kin Cabernet Sauvignon

Final Course

Apple crisp featuring local Granny Smith apples, crumble topping, and cinnamon
Wine:  Kith and Kin Chardonnay
